[RECIPE] Bloomin’ brilliant bean burgers

Everybody loves a burger from time to time but most see it as a guilty treat. It needn’t be that way. This bloomin’ brilliant bean burger recipe contains whole food ingredients and is lower calorie than a meat alternative. Spice it up as you like and enjoy with your favourite burger garnishes
Ingredients (makes 8 burgers)
- 1 cup medium-grain brown rice
- ½ cup sunflower seeds
- 5 garlic cloves, peeled
- 1 red onion, diced
- 1 carrot, grated
- 1 cup beans of choice, cooked and drained
- 2 tbsp nutritional yeast
- 2 tbsp gluten-free oat flour
- 4 tsp of ground cumin and coriander
- Freshly chopped basil, cilantro and parsley
- 2 tbsp tomato paste
- 4 tsp gluten-free soy sauce
- 20ml water
- Salt and pepper to taste
Method
- Over a medium heat, bring the rice to a boil then lower heat and simmer for 15 minutes
- In a food processor, combine sunflower seeds, garlic, red onion, carrot and beans and blend to a paste
- Add the paste to the rice along with the nutritional yeast, flour, herbs, spices, water, salt and pepper. Mix with your hands
- Form 8 burgers from the mix and place in the fridge to set for at least 1 hour
- From the fridge, place the burgers on a baking tray and let them do their thing for 30 minutes at 180⁰C
- Enjoy with your favourite burger garnish!
